A five-course "Terre et Mer" tasting menu

On a recent visit we photographed a printed tasting menu pairing sea and land courses — scallop or mushroom broth to start, a black mullet course, beef or wild boar, and a cheese or apple finish, each with a suggested wine glass. It's a good indicator of the kitchen's style, though courses and pricing change with the season.
